not just another BLT

BLT with an egg - sounds a little weird, but so, so delicious! Best part is when the egg breaks and is running out over the blt and you dip the sandwich into the egg - oooh, heaven:) It's my go to quick supper and so great for breakfast when you have a little time to fiddle, but don't want the traditional bacon & eggs. 


flax seed bagel (from Safeway) (could use bread
lettuce (I like to use shredded lettuce)
double chedder cheese - grated or use pre-shred
egg 1 or 2 - I use 1 for 1/2 a bagel, 2 for a whole bagel


1. Cook bacon.
2. When the bacon is done, fry the egg.
3. While egg is frying, toast the bagel.
4. Now assemble: bagel, cheese, bacon, tomato, lettuce, and top with the egg.
**Last hint - have a napkin, close by - this is a messy, finger-licking, best-ever BLT!
