For the love of cookies

This is a recipe my mom found in a little cafe in Quebec (Au Petit Cafe Ste. Anne de Bellevue) many, many years ago. The recipes were all from voluteers who worked in the cafe and, because so many wanted the recipes, they put them into print. It is a charming little cookbook, that is quite worn and well used! My mom has since passed but I still think of her everytime I make these cookies which were a favorite out of the book. I hope you enjoy them as much as we do.

Gingersnaps
2 c. flour (sifted)
1/4 tsp salt
1 tsp ground cloves
1 tsp ground ginger
1 tsp cinnamon
3 tsp b. soda
3/4 c. shortening
1 c sugar
1 egg
1/4 molasses
sugar
Cream shortening till light and fluffy, add in 1 cup sugar, mix in egg and molasses, then stir in the flour, salt, cloves, ginger, cinnamon and b. soda until well mixed. Shape the dough into 1 inch balls, roll in sugar, place on cookie sheet lined with parchment. Flatten with fork or fingers and sprinkle with more sugar. Bake 8-10 minutes at 350 - cookies should look set, but not dark.
