Orange ya glad you made this muffin?

February 5, 2017

There is nothing like a bit of citrus in the morning - I start my day, everyday, with either a grapefruit or an orange so I knew I would like these muffins. They are a really pretty looking muffin that tastes just like oranges and with the sour cream in them, you know they are going to be moist and have lovely texture - which they do. So go ahead and bake a batch, you'll get a 'well done' from whomever you decide to share the with;)

Orange Sour Cream Muffin with Drizzle
1 3/4 c. flour
2/3 c. sugar
1 tbsp b. powder
1/2 tsp. salt
In separate bowl mix together
1/2 c. unsalted butter - melted
1 c. sour cream
1 lg. egg
1/4 c. fresh squeezed orange juice
zest of 1 orange
Make a well in your dry ingredients and add the wet, mixing until just combined.
Put the batter into paper lined muffin tray - this makes 12 muffins.
Bake at 350 degrees for about 15 minutes or until they pop back when lightly poked or you can insert a toothpick to see if it comes out clean.
Now, make the glaze
1 1/2 c. confectioners sugar
1/4 c. fresh squeezed orange juice
2 tsp. orange zest
stir well until it is smooth.
When the muffins are done, let rest for about 10 minutes and then glaze. I tried to dip my muffins like the original recipe called for but the top came off, so I just drizzled mine with a spoon - old school and it worked just as well.
Have to give a thank you to '' for this great recipe.
