Here's a gluten free recipe, that is a great snack whether you're gluten free or not.
Line a baking sheet with parchment paper and spread
2 c. oats
3/4 slivered almonds
1/4 c. unsweetened coconut
Bake at 350 for about 10-15 minutes, mixing the mixture up every 5 minutes, until lightly toasted.
While the toasting is going on, put the following into a saucepan and add
1/2 c. peanut butter (smooth or crunchy)
2 tbsp. coconut oil
1/4 c. maple syrup
remove from heat, when mixed and pourable.
3/4 c. chopped medjool dales
In a large bowl add the oat mixture and chopped dates and pour the peanut butter mixture over top.
Transfer to an 8x8 dish that has been lined with parchment paper and spread mixture evenly.
Put another layer of parchment paper over top and press down on the granola mixing it very firm.
Pop the mixture into the freezer for 30 min to set, remove and cut into bar or if you like, crumble it up and use it like a granola topping on yogurt.
