Party in your Mouth?!?

Because some days you just need a little happiness and what says that more than a cupcake, but a cupcake with sprinkles inside and out. So bake a little happy and make someone's day just a little more special.

Confetti cupcakes

In a bowl, whisk together:
1 3/4 c. cake flour
3/4 tsp. b. powder
1/4 tsp b. soda
1/4 tsp salt

In the bowl of your stand mixer, add:
1/2 c. unsalted butter and beat until smooth and creamy
add 1 c sugar and cream together
now add 3 large egg whites
2 tsp vanilla extract
1/2 tsp butter extract (available at bulk barn, but not necessary)
1/2 c. full fat sour creme (room temp)
beat in and add the dry ingredients at a slow speed
slowly add in 
1/2 whole milk (room temp)
Do not overmix
Once combined add in gently, with a spoon:
1/2 c. sprinkles - do not overmix as this may cause color bleed.

Line 12 baking cups with liners, fill 2/3 up and bake at 350 for about 15 minutes or until a toothpick come out clean

Butter Icing
Beat for about 2 minutes
1 c. unsalted butter at room temp
4 1/2 c. icing sugar
1/4 c. heavy cream
2 tsp vanilla extract
You may need to add extra icing sugar if the mixture does not seem thick enough
Beat for about 3 minutes on high speed then add
food coloring or paste (if you like) to the desired color
Frost cooled cupcakes and then sprinkle with sprinkles.
