Will this ever end?

It was a bounty of a season for zucchini in my brother's garden, so I'm doing my best to use up his produce! So, here's a gem of a zucchini recipe perfect for a to-go snack.

 

Zucchini Chocolate Chip Muffins

 

Combine in large bowl
1 1/2 c. flour
3/4 c. sugar
1 tsp b. soda
1 tsp. ground cinnamon (I had 1 family member who would have preferred this to be left out)
1 /2 tsp. salt
set aside.

 

 

 

Mix together and add to above
1 egg
1/2 c. veg. oil
1/4 c. milk
1 tbsp. lemon juice
1 tsp. vanilla

 

Stir the wet mixture into the dry mixture until just moistened

Gently add in
1 c. shredded zucchini
semi sweet chocolate chips - you decide how many (and your choice of mini or regular)

 

Grease or line with paper liners a 12 muffin tin. Fill with batter and bake at 350 for about 15-20 minutes - until they spring back when lightly touched.

 

and here's another way to use up your zucchini

 

This cake recipe is incredibly moist and chocolatey. Eating your vegetables while you're having your cake - winner, winner chicken dinner!! Let's celebrate the zucchini and use up that lovely green veggie that's taking up space in your fridge;)
 

In large mixing bowl beat together, until smooth
1/2 c. butter
1/2 c. vegetable oil
1 3/4 c. sugar
1 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. baking power
1/2 tsp salt
When smooth beat in
2 large eggs

 

Stir in 
1/2 c. sour creme, buttermilk or yogurt alternating with 
2 1/2 c. all purpose flour
Add
3/4 c. cocoa or if you can find it dutch process cocoa 
2 tsp. espresso powder (optional)
When all is combined
add
3 c. shredded zucchini
1/2 c. chocolate chips

 

Bake in greased 9x13 pan for 30-35 minutes at 350 until the top springs back when touched.
 

Let cool and frost with the following
 

Buttercream Icing
(I cut this recipe down, so measurements are a bit wonky)
1/2 c. butter, beaten until fluffy
add 
1.6 c. icing sugar
1/3 c. cocoa power or dutch process cocoa powder
beat for 3 more minutes, add
.2 c. milk
1/3 tsp vanilla
Beat again at high speed until fluffy.
Spread onto cake.
