A healthy muffin?!

We do try to eat healthy - I mean, don't we all? But it is really hard when you love to bake and love baked goods! So we found this recipe that is a bit healthier and surprisingly, it is really good. So, up to you, but give it try - you might be surprised too;)

 

Healthy Pumpkin Chocolate Chip Muffins
In a large mixing bowl, whisk 
1/4 c. coconut oil in liquid state
1/2 c. honey
whisk in
2 eggs

 

now add in
1 c. mashed bananas (about 2-3 bananas depending on size)
1 c. pure pumpkin puree
1/4 c. milk
2 tsp. pumpkin pie spice
1 tsp. b. soda
1 tsp. pure vanilla extract
1/2 tsp. sea salt

 

Add, until just combined
1 3/4 c. white whole wheat flour

 

fold in
1 3/4 c. chocolate chips or chunks (dark or semi-sweet)

 

Fill 12 baking cups or a 12 cup pan sprayed with non-stick cooking spray.

 

Bake in a preheated 425 degree oven for 5 minutes, turn down to 350 for about 15-18 minutes, until the tops spring back or a toothpick comes our clean.
