Gingerbread done easy

 Gingerbread - that word makes us think of gingerbread houses and cookies which are sooo lovely but a bit of work. If you're a little time challenged but still want to have gingerbread for the season, this is a quick and easy loaf with the flavor of gingerbread and, because I can't not have chocolate, a smattering of chocolate chips which is quite delicious in this loaf.

Chocolate Chip Gingerbread loaf with Frosting

Cream together in the bowl of a stand mixer
1 stick (1/2 c.) unsalted butter (room temp)
1 c. sugar
add in
1 egg
1/2 c. molasses
1 tsp vanilla
Mix until well blended

In separate bowl, whisk together
2 1/2 c. flour
1 tsp b. powder
1 tsp. b. soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. ginger 
1/4 tsp. cloves
1/4 tsp nutmeg

Add the flour mixture to the butter mixture and combine

With mixer on low, slowly add 
3/4 c. boiling water

Fold in 1 c. chocolate chips

Bake at 350 in a loaf pan that has been greased, lined with parchment paper and greased again (so much easier to take the loaf out of the pan) for 45-50 minutes (until a toothpick comes out clean)

Topping
So, 2 options - when cool you can dust with icing sugar or frost - no wrong way!

Frosting
1/2 c. unsalted buter (room temp)
1 c. icing sugar
1/2 tsp. vanilla
Beat together on high speed for about 6 minutes
Spread on loaf
