Blue Monday - fact or fiction?

Why did I pick this recipe this week?

Reason 1 - I have become infatuated with blueberries! I never used to like them, but lately I'm eating them by the handful and putting them into my salads, loaves and muffins.

Reason 2 - they are super healthy, full of all kinds of good vitamins.

Reason 3 - Monday is 'blue' monday so thought it fitting to make a blue muffin. What is 'blue' monday you ask? It's supposed to be the most depressing day of the year. Really?! The factors that determine this are: the weather, debt level (specifically, the difference between debt and our ability to pay), the amount of time since Christmas, time since failing off our new year's resolutions, and low motivational levels. Hmmm...not sure that I agree, but it makes for a good story! So, ignore 'blue' monday, but enjoy these 'blue' muffins - they will make your tastebuds and tummy happy!

 

Blueberry Marble Muffins

 

Blueberry mix for marble
In a small saucepan add
1 c. blueberries
1 tsp. sugar
Cook over medium heat, while smooshing the blueberries with the back of a spoon (takes about 5 minutes or so), stirring constantly until the mixture has thickened and berries have broken down - let cool.

 

Muffin
In a large bowl whisk together
2 1/2 c. flour
2 1/2 tsp. b. powder
1 tsp. salt

 

In separate bowl, mix together
2 large eggs
1 c. sugar
Slowly add in 
4 tbsp. melted butter
Mix in, until smooth
1/4 c. veg. oil
3/4 c. plain yoghurt
1/4 c. milk
1 1/2 tsp. vanilla

 

Fold the wet mixture into the dry mixture, until just combined (will not be smooth) 
gently mix in
1 c. blueberries

 

Fill your muffin tins with batter (makes 12 muffins)

Spoon about 1 tsp of blueberry mixture onto the top of the muffin and using a skewer, swirl the blueberry mixture into the batter of the muffin.

 

Streusel Topping
Combine the following
1 1/2 tbsp. sugar
1 1/2 tbsp. b. sugar
pinch salt
1/4 c. flour
add
2 1/2 tbsp. warm melted butter
mix together until crumbly

 

Sprinkle streusel topping over muffins and bake at 350 degrees for about 15 minutes. Remove from oven when tops pop back after you push down on them or use a toothpick into the middle (a few crumbs will attach)
