This is a really good oatmeal cookie. In our house, they usually have an addition of chocolate chips but thought I'd go without. I took these to work and the ladies were very surprised at the taste and texture - the comment was 'usually plain oatmeal is boring' but these were outstanding - they all wanted the recipe! The recipe is from Ricardocuisine.com (oatmeal cookie-the best) and it did not disappoint (none of his ever do). So give the poor, plain cookie a chance and see what you think;)
In bowl combine
1 1/2 c. flour
1 1/2 c. quick oats
1/4 tsp. salt
In the bowl of a stand mixer, cream together
1/2 c. unsalted butter, softened
1 1/4 c. brown sugar,
1/4 c. canola oil
when combined, add
Add dry ingredients to wet, mixing until combined.
Drop onto baking sheet and back at 350 until lightly browned. Depending on the size of your cookies about 10 minutes.
