A spoonful of sugar

I've been going thru my 'best of bridge' cookbooks, and I came across this muffin. It's lemon, has a sugar topping and is full of blueberries - how could it not be good? So the results came in - it was not only good, it was delicious - moist, good texture and the sugar crust on top was perfect - in fact, when I asked my kids if they wanted to take some home - there was a round of 'yes, please'!


Lemon Blueberry Muffin
2 c. flour
1/2 c. sugar
1 tbsp b. powder
1/2 tsp. salt
rind of 1 lemon


In separate bowl mix
1 egg
1 c. milk
1/2 c. melted butter


Add wet to dry ingredients, until just combined and then gently add in
1 c. blueberries (fresh is what I used but you can use frozen)


I filled my muffin tin quite full and got 9 muffins out of this, (recipe says you can get 16 but they'd be quite small) Just be sure to adjust your baking time if you make them smaller.


Bake at 350 for about 15-20 minutes.


1/4 melted butter
2 tbsp. lemon juice


Separate bowl
1/2 c. sugar


When muffins have cooled slightly, dunk the tops of the muffin into the lemon/butter mix and then immediately into the sugar.


"A spoonful of sugar helps the medicine go down" from Mary Poppins but this muffin is a delightful way to have a happy day!
