Sheet, this is easy!

I found this recipe on a whole 30 site (which means no gluten, no dairy, no sugar) and it seemed simple and easy, which is what we all like. Made it last week and it lived up to what I thought it would - it was really good! So if you're pressed for time, need something easy - give it a try;)

 

Sheet pan fajitas

 

In a large bowl place
1 pound chicken breasts (cut into thin slices)
1 red pepper sliced
1 yellow pepper sliced
1 orange pepper sliced
*any combo of peppers works - but the colors of different peppers makes a nice presentation

 

 

Mix in a small bowl
1/4 c. olive oil
2 tsp. chili powder
1 tsp. cumin
1/2 tsp. garlic powder
pinch of chili flakes 
1 tsp. salt
1/2 tsp. ground pepper

 

**Pour spice mixture into the chicken/pepper mixture and toss to combine.

 

Spread out onto a cookie sheet (I lined mine with parchment paper for easier cleanup), making sure they are not too crowded.

 

Bake at 350% for about 25-30 minutes (until your chicken is done)

 

Serve with tortillas, sour cream, avocado & cheese.(if you're doing whole 30, adjust the toppings)

 

**if you like crunchier peppers in your fajitas, don't mix them with the chicken - do 2 separate cookie sheets and put the pepper one in later.
