Smoothie Bowl - Yum!

I am OBSESSED with smoothie bowls. They are so fun to make and even better to eat! Here's a version that I really like with my homemade chocolate granola.


Chocolate Granola (make ahead and keep it in a sealed container (p.s I came home one day and found my husband eating it by the handful - that good!)


In a large bowl combine
3 c. rolled oats 
1 c. sliced almonds
1/3 c. cocoa powder


Stir and add
1/2 c. maple syrup
2 tbsp canola oil
pinch salt


In separate bowl whisk
1 egg white until foamy

Stir into the oat mixture


Scatter the mix onto a parchment lined baking sheet 
Bake 325 for about 25 minutes.

Cool and add

1/2 c. dark chocolate (I used dark chocolate chips but you could use chopped chocolate as well)


My smoothie recipe is really simple, but sadly I don't have perfect amounts, I just add until I get the consistency I like

I start with almond milk in the bottom of the blender - start with about 1/2 cup
1/2 tsp honey
1/2 tsp vanilla
Add plain greek yogurt - 3 good dollops
frozen fruit - whatever you like - I like the berry blend about 1-2 cups
Now blend - if it seems a little stiff, add more milk.
I like to pulse and stir
When it's where you want it to be, (a little more substance that if you were using a straw)

Pour smoothie into your bowl - and add granola and fresh fruit.
