Did someone say chocolate chip cookie?

Is there anyone who doesn't like a chocolate chip cookie? This cake is really just that - a giant cookie, made to look like a cake, but a bit easier, no scooping dough, no waiting for the batches to bake and this looks a bit more impressive, but most important - it tastes good!

 

In the bowl of a stand mixer, add
1 c. unsalted butter (softened)
1 c. b. sugar (lightly packed)
1/2 c. sugar


Cream until smooth and add
1 large egg
1 egg yolk
1 tbsp vanilla


When combined add in (use low speed and add in intervals or you'll have a snow storm in your kitchen)
2 1/4 c. flour
1 tsp. b. soda
1 tsp. fine sea salt


Mix in, by hand,
1 1/2 c. choc. chips (I used semi sweet but you could use milk chocolate chips too)

 

Divide into 2 round 9" cake pans that have been lined with parchment paper and greased (this makes for easier removal of the cakes)

 

Bake at 350 for about 15-30 minutes, until lightly golden brown.

Serve in wedges with scoop of ice cream. Can be served warm or room temp:)
