It's the season for gifting! At the shop, we help our customers find the perfect gifts for their friends and family, and they are always wondering how and what we gift. So here is an idea of mine. I love the Kilner glass jars - we have different kinds, some that are for snacking (a separate part to put your dip if you're taking veggies), a jar for layered salads, a couple of others and the one below - the original. But how can you give a glass jar? Why filled of course:) So in this jar I am putting my favorite, super easy, granola. For my gift, I'm pairing it with a pretty april cornell teatowel and a mepal lunch pot - perfect for granola and yogurt (or soup and crackers, salad and dressing) - and another of my favorite things!
Granola (adapted from Gimmesomeoven.com)
In a large bowl mix together
4 cups oats
1 c. chopped pecans (you can use a mixture, I've made it using pecans and almonds, but use your favorite nuts)
1/4 c. chia seeds
2 tsp. cinnamon
1 tsp. sea salt
In separate bowl, mix together
1/2 c. melted coconut oil
1/3 c. maple syrup (the I use the Escuminac brand that we sell in the shop and that was featured in the Canadian Living magazine gift guide)
2 tsp. vanilla
Add the wet to the dry, mixing well.
Bake on a parchment lined baking sheet at 350 degrees.
Bake for 10 mintues, give it a stir, and bake for 10 more.
*If you like you can add 2/3 c. unsweetened coconut at the end and bake until it's toasted (a couple of minutes - watch carefull so it doesn't burn)
I also added in some dark chocolate chips when I removed mine from the oven but not necessary.
Let cool before stirring.
