Oldie but goodie!

January 20, 2019

This is an oldie but a goodie - I found this recipe that called it 'the best' so thought I'd try it. It has white sugar in the recipe which I don't normally put into mine, but this is supposed to keep it from getting hard and keeping it gewy and chewy and it did not disappoint - this will be my puffed wheat recipe from now on!

Puffed Wheat Cake

Combine in a saucepan
1/2 c. margarine
1 c. corn syrup
1 c. brown sugar
1/4 c. white sugar
5 generous tbsp. cocoa

Bring to a boil over medium heat. Boil until 3 bubbles pop.

Remove from heat and stir in
1 tsp. vanilla

Pour over 8-9 cups of puffed wheat * and stir together until all the puffed wheat is coated with the syrup mixture.

Press into a 9x13 pan.

*puffed wheat used to be easily available - I had a hard time finding some so the 2 stores that have it are the Coop in East Regina and the Emerald Park IGA.

Enjoy:)
