Snack attack!

I don't think I'm the only one that feels a need for a mid-morning snack, afternoon snack or needs something quick on the way to fitness class - so, I've been trying to find things that give me energy and will keep me satisfied. I found this recipe at and I really like it!


No Bake Healthy Granola Bar


Add the following to a saucepan
1/2 c. natural peanut butter 
1 1/2 tbsp. coconut oil
3 tbsp honey
1 tsp. vanilla
1/2 tsp. cinnamon
Over medium-low heat, let it go, stirring every so often until the mixture is smooth and creamy (doesn't take long)


Remove from heat and stir in
1 tbsp chia seeds
1/3 c. flaxseed meal
1/2 c. oats


Fold in 
1/3 c. chopped pecans

Press into a parchment paper lined, 8x4 loaf pan (tip - use another piece on top and press down on this - keeps your hands clean)


2 tbsp. dark chocolate chips
1/2 tsp. coconut oil
heat together and drizzle over top of the bar

Pop into the fridge for an hour until they are set, cut into bars, wrap in plastic for your week ahead.
