Lemon + blueberry = love at first bite

How many of you are fans of Joanna Gaines? All of us at the shop love what she does and are always excited when her magazine comes out. She usually has recipes in the magazine that are quite simple and easy to make. Her last issue had a few quick breads, so I thought I'd try them. They are a bit different than a loaf - a different texture - more biscuit-like than loaf, if that makes sense. They aren't quite as sweet, which is why I think they need the glaze (no sweet tooth here!) but it was quite good. Perfect with a mug of coffee or tea;)




Lemon & Blueberry Quick Bread


In large bowl combine
2 c. flour
1 c. sugar
2 tsp. b. powder
1/2 tsp. salt
1 tsp. lemon zest (about 1 lemon)


In separate bowl, mix together
2 eggs
1/2 c. milk (full fat is best)
1/2 c. butter, melted (I used unsalted)


Add the egg mixture to the flour, stirring until combined - don't over stir.


Gently fold in
3/4 fresh blueberries


**batter is thick and lumpy

Spoon into a loaf pan that has been lined with parchment paper and lightly greased. (I used butter)


Bake at 350 for about 60 minutes.

If you check it earlier and the top is browning but it still has a while in the oven, cover the top, loosely, with tin foil (shiny side down) to prevent over browning.

Cool and remove from pan.

Lemon Glaze
Icing Sugar
Lemon juice


This is where you play - start with about a cup or so of icing sugar and add your lemon juice until you get the consistency that will let you drizzle the icing over the loaf.

You can spread or drizzle, but I liked the look of the drizzle.
