Snack time, lunch time, anytime

Granola bars are always thought to be so healthy but when you look at what goes into a boxed granola bar you have to be so careful. Lots of them are full of processed ingredients and have really high sugar content. So here's one that I found that is really good and uses ingredients that are a little better for our bodies.



Peanut Butter Chocolate Chip Granola Bars


In a medium sized saucepan, combine
3/4 c. natural peanut butter
1/2 c. honey
2 tbsp. coconut oil

Over medium heat, stir until the mixture reaches a simmer - let simmer 1 minute and remove from heat


Add in & stir until combined
1 tsp. vanilla
1/2 tsp. sea salt


Now add
2 1/4 c. oats
1 c. slivered almonds

Stir until every thing is mixed in.


Next steps are up to you


option 1 - Let cool (I popped mine into the fridge) for about 15 minutes or so)
Remove and add 
mini chocolate chips - as many as you like (1/2 cup or so)


option 2 - You can add the chocolate chips in when the mixture is warm but the chips will melt - this is ok too - just, kind of marbles thru the bar.


option 3 - sprinkle chocolate chips on top after you've pressed into your pan


Press into an 8x8 pan that has been lined with parchment paper - makes it much easier to take the bars out of the pan.


Let the bars sit for about an hour or so in the fridge and then cut into bars.
